traditional porridge

In Scotland, porridge is traditionally made with oats, water and salt. Cream or cold milk is served on the side to create a contrast between hot and cold. My favourite way of making porridge is to use milk instead of water and sweeten it with a generous dash of maple syrup.

serves 1 • preparation time: 10 minutes • cooking time: 20–30 minutes

50g/1¾oz oats (for a really creamy porridge choose small oat flakes)

300–400ml/½ pint–14fl oz water, half-and-half water and milk or milk only

1 tbsp honey or sweetener of your choice (optional)

25ml/1fl oz chilled single cream, for serving (optional)

Pinch salt
